Orange blossom pound cake

One thing to do during quarantine is... Baking cake of course! Preferably with fewest ingredients, with things that we already have in our pantry and fridge.

Everybody already knows pound cake, isn't it ? "Quatre-quarts"in French (which mean four quarters) because it is made with a pound of each of four basic ingredients: flour, butter, sugar and eggs. mix all of them and bake it! Pretty simple.

I just adjusted mine a little bit, by putting less sugar, adding orange blossom water and I made an orange glaze with fresh thyme leaves on the top.

Thyme add a fresh and savory flavour to the orange glaze, but you can make it simple without any icing. The cake will still be perfect for teatime, breakfast, or as a "midnight dessert", as it was for me.



- 1 cup of flour   (130g)
- 1 cup of butter  (130g)
- 1/2 cup of sugar  (65g)
- 2 eggs
- 1 tsp of baking powder
- 2 tbsp of orange blossom water
- 1 egg white
- 1/2 cup of powdered sugar
- 2 tbsp of squeezed orange

1) In a bowl put all the dry ingredients together
2) Add melted butter and mix it all up
3) Whip whole eggs with a hand mixer (You can skip this part and directly put the eggs in the mixture but whipping them will make the cake less dense,more soft and a little fluffy.
4) Preheat your oven to 180°C(350°F) and bake it for 50 minutes

1) Put the egg white, powdered sugar and squeezed orange together
2) Mix them until the icing forms (It's recommended to add the powdered sugar little by little but I just mixed them all together with a hand mixer and it worked well)
3) Frost the cooled cake and decorate with fresh orange slices and thyme leaves
4) One hour in the fridge and your cake is ready to eat !
